I've seen it done a number of ways,
Some people will ask for a credit card or cheque, but
won't charge the card or cash the cheque till the
book is in stock.
Billing is always a rough way to go, especially if there
is a significant time lag.
My preferred method is to sell 'gift certificates' which entitle the bearer to one copy of the book.
I've even had bookstores sell the gift certificates, which the customers then mail in.
